Executive Chef
Dylan Shook is the Executive Chef of The Independent, an elevated, coastal restaurant located at The George Hotel in the heart of Georgetown, SC. At The Independent, Shook draws on the Lowcountry’s rich culinary roots awhile bringing fresh perspective and forward-thinking cuisine as he leads the kitchen’s talented team.
Born and raised in Michigan, Shook earned his degree in Applied Science through Culinary Arts at the Culinary Institute of Michigan. After working in award-winning restaurants such as Mandolin and Ashley Christensen’s legendary Poole’s Diner in Raleigh, NC, Shook made his way to Georgetown where he joined The Independent team in 2025. Here, Shook has immersed himself in the unique ingredients and culture behind the Lowcountry’s foodways with favorite ingredients such as rice, field peas, and the vast seafood from local waters. While building relationships with local purveyors and honoring the region’s culinary diversity, he enjoys innovating the menu with new dishes and pushing his team to grow and learn.
When Shook is not in the kitchen, he enjoys trying his hand at cooking new cuisines and dishes and playing golf at the area’s many beautiful courses.
